This Zucchini Boat Recipe is a super simple recipe to make at home. Not to mention, it’s healthy and great for entertaining.

If you are on a keto or low carb diet, these pizza zucchini boats are a great weeknight recipe. They are quick and easy to make, can be topped with lots of ingredients and are filling. Serve with a side salad for a complete meal.

Zucchini pizza boats is a great kid friendly dinner recipe and is adult approved, because, well…PIZZA! You can also fill your zucchini boats with various pizza toppings and fillings, but this traditional pizza version is hard to beat!

  • zucchinis
  • mini pepperoni
  • mozzarella
  • marinara sauce
  • fresh basil to serve

How to Make Zucchini Boat

Preheat the oven to 400°.

Spray a baking dish or tray with cooking spray.

Cut the zucchini in half lengthwise and scoop out the seeds with a spoon. Watch how easy it is done in the video below!

Fill the zucchini boats with marinara sauce, mini pepperoni and shredded mozzarella cheese.

Cover with foil and bake for 35-40 minutes.

Garnish with basil or parmesan cheese if desired and serve.

How to Store Leftover Zucchini Boats

First and foremost, you do not want to freeze zucchini as it will become super mushy. You can store the pizza boats in the refrigerator for up to 3-4 days in an air tight container.

You will want to reheat in the oven at 350° until the cheese is melted again and the boats are hot.

  • 4 large zucchinis
  • 1 c mini pepperoni
  • 1 jar marinara sauce (Rao's is great!)
  • 2 c shredded mozzarella
  • basil for garnish

Instructions

  1. Preheat the oven to 400¯.
  2. Spray a baking dish or tray with cooking spray.
  3. Cut the zucchini in half lengthwise and scoop out the seeds with a spoon.
  4. Fill the zucchini boats with marinara sauce, mini pepperoni and shredded mozzarella cheese.
  5. Cover with foil and bake for 35-40 minutes.
  6. Garnish with basil or parmesan cheese if desired and serve!
