Why do they call it Mississippi Pot Roast?

A woman by the name of Robin Chapman, a Mother from Ripley, Mississippi, created the recipe in the 90’s as she was trying to make her aunt’s pot roast recipe less spicy for her family.

She then submitted the recipe to her church cookbook and it simply took off!

Why is my Mississippi Pot Roast not tender?

Meat gets tender as the fats break down and simply begin to melt the meat making it softer. If your roast isn’t able to pull apart with a fork, it simply needs more time to cook.
