Ingredients for Oven Roasted Salmon Recipe
- brussel sprouts
- citrus: blood oranges and lemons – you can use a combination or use one or the other
- salt and pepper
- garlic
- olive oil
- fresh herbs: any combination of rosemary, thyme, oregano, etc.
How to Make Salmon in the Oven
On a baking sheet, place brussels sprouts. Drizzle with olive oil, salt and pepper. Push the sprouts to the outside of the tray.
Lay out your citrus in the middle of the baking sheet, then set your herbs.
Next, add the salmon. Drizzle with olive oil, salt and pepper and top with additional citrus slices and garlic.
Bake for 15-20 minutes until salmon has cooked to your preference and brussel sprouts are roasted.

- 1 1/2 lbs brussels sprouts, trimmed and halved
- 3 tbsp olive oil, divided
- 2 blood oranges, sliced thin
- 2 lemons, sliced thin
- spigs of fresh herbs (dill, rosemary, thyme, oregano, tarrgon)
- 10 garlic cloves, peeled and smashed
- salt and pepper to season
