This Mushroom Tortellini recipe comes together in under 25 minutes. It’s made with sliced button mushrooms, shallots, garlic, your families favorite tortellini and thyme.

If you are short on time this week, this pasta recipe is a quick and easy recipe. Not only is it simple to make, but, the ingredients are budget friendly and there’s not many of them. While the pasta is boiling, create the mushrooom sauce in a skillet. Dinner is ready to be served in under 25 minutes!

  • tortellini – use your families favorite or one that is on sale!
  • unsalted butter
  • button mushrooms – you can substitute for your favorite mushrooms.
  • garlic – add as little or as much as you’d like!
  • shallot – you can switch out for a red onion if you choose.
  • thyme
  • grated parmesan cheese

How to Make Mushroom Tortellini

Bring a large pot of salted water to a boil. Add the tortellini and cook according to packages instructions, then drain.

In a large skillet over medium heat, melt the butter.

When the butter has melted, add the mushrooms, shallots, and 1 tsp of salt. Cook for about 7 minutes until the mushrooms and shallots soften.

Add the garlic and cook until fragrant, about 1 minute.

Add the cooked pasta to the skillet along with the thyme. Cook for another minute to heat through and season to taste with salt and pepper.

Serve immediately, garnished with cheese and more thyme.

Ingredients

  • 18 oz. tortellini, cheese or sausage
  • 1 tbsp unsalted butter
  • 20 oz. sliced button mushrooms
  • 2 garlic cloves, minced
  • 2 shallots, sliced thin
  • 2 tbsp fresh thyme

Instructions

In a large skillet over medium heat, melt the butter.

When the butter has melted, add the mushrooms, shallots, and 1 tsp of salt. Cook for about 7 minutes until the mushrooms and shallots soften.

Add the garlic and cook until fragrant, about 1 minute.

Add the cooked tortellini to the skillet along with the thyme. Cook for another minute to heat through and season to taste with salt and pepper.

Serve immediately, garnished with cheese and more thyme.

Notes

Dairy free: Use DF tortellini or a pasta that does not contain cheese filling.

Gluten free: Use gluten free pasta altenerative or homemade.
