This Taco Pasta recipe is fabulous for busy weeknights or feeding a crowd. Ten minutes of prep work and you’ll have a delicious recipe the entire family will enjoy.

We have tried this recipe a variety of ways. There’s several different recipes floating around online, but, this taco pasta recipe is one the family asks for often! Not to mention, if you are feeding a crowd on a budget this pasta is a great go to.

Ingredients for Taco Pasta

Just a few simple ingredients is all you need to enjoy this Mexican pasta!

  • hamburger – you could also use ground turkey.
  • bell pepper, chopped
  • Rotel tomatoes – this can be substituted for regular diced tomatoes
  • corn – frozen or can, both work!
  • taco seasoning
  • chicken broth
  • pasta noodles, cooked – we prefer a smaller noodle and used mini penne noodles for this recipe.
  • cheddar cheese – you can also use a Mexican blend cheese

How to Make Cheesy Taco Pasta

  • Save

Start by browning the hamburger in a skillet. Be sure to drain off any fat.

Next, place the browned hamburger into the bottom of your slow cooker along with tomatoes, corn, taco seasoning, bell pepper and onions.

Give it a stir and cover. Cook on low for 4-6 hours.

Stir in the cooked pasta and cheese about 10-15 minutes until you’re ready to serve.

Slow Cooker Taco Pasta

Ingredients

  • 1 lb. lean hamburger
  • salt and pepper to taste
  • 1 bell pepper, diced
  • 1 onion, diced
  • 15. oz Rotel Tomatoes
  • 1 c corn
  • 1 taco seasoning packet
  • 2 c chicken broth
  • 2 c noodles, mini penne or smaller shell
  • 1 c cheddar cheese, shredded

Instructions

Start by browning the hamburger in a skillet. Be sure to drain off any fat.

  1. I’m assuming the chicken broth goes into the slow cooker when the beef does? I’m not much of a cook, so something like this isn’t as apparent to me. 😛
