Are you living on a budget, and on the hunt for some easy frugal meals for your family?

Debbie, you are absolutely right! I’ve been getting a lot of questions recently about this, and as a podiatrist I understand the need for diabetics and others that have issues with carb heavy meals. Zucchini lasagna (for those anti-pasta folks!)
Sliced thin zucchini, browned hamburger with quite a bit of onion, diced tomatoes & mozzarella cheese. Layer in that order 3x. Add salt & pepper & bake for 30 min at 350*. I tilt the pan & let the juices all run out when done. My husband likes to add a spaghetti or marinara sauce as well (I love it like it is!)
