I understand that pasta is less expensive and makes easy frugal meals. But many of us cannot have pasta. Yes, I can substitute some of the veggies for the pasta. How do you get frugal meals that are healthy and carb controlled?

Debbie, you are absolutely right! I’ve been getting a lot of questions recently about this, and as a podiatrist I understand the need for diabetics and others that have issues with carb heavy meals. I’m going to work on some recipes specifically for this need very soon! Thank you for bringing it up because it’s very important.
Zucchini lasagna (for those anti-pasta folks!)
Sliced thin zucchini, browned hamburger with quite a bit of onion, diced tomatoes & mozzarella cheese. Layer in that order 3x. Add salt & pepper & bake for 30 min at 350*. I tilt the pan & let the juices all run out when done. My husband likes to add a spaghetti or marinara sauce as well (I love it like it is!)
