This Apple Sausage Sheet Pan Dinner is a quick week night meal. There’s no fuss, little mess and a filling dinner that won’t break the bank.

Chicken sausage, carrots, red potatoes, broccoli and zucchini are tossed with olive oil and seasonings and roasted to perfection! This is a easy 20 minutes meal that is healthy and packed full of flavor for a qick week night dinner option.

Sheet pan dinners have become a favorite in my house. They allow you to cook most meats and veggies at the same time, for a healthy and nutritious dinner that anyone can make!

What I love about sheet pan dinners:

  • easy clean up
  • great way to use on sale produce or use what is leftover in the fridge
  • prepare the vegetables the night before, store in the refrigerator and dump onto a baking sheet with the chicken sausage for a quick weeknight dinner

Ingredients for Sausage Sheet Pan Dinner

  • chicken apple sausage – this is great for changing up flavors in the sausage. However, you can use your families favorite variety or a combination.
  • veggies: carrots, red potatoes, zucchini broccoli – again you can change up the vegetables to whatever is one sale or on hand.

How to Make Sheet Pan Sausage and Veggies

Preheat the oven to 400°.

Prepare all your vegetables and slice the chicken sausages. You want to ensure the vegetables have around the same cooking time so that they are all done at the exact same time. In addition, make sure all the produce are chopped around the same size.

Place the vegetables along with the sausage onto the baking sheet.

Toss with olive oil, basil, oregano and garlic powder.

Roast for 15 minutes, stir and return to the oven for another 10-15 minutes until veggies reach desired tenderness. Remove from the oven and sprinkle with parmesan cheese if desired.

Ingredients

  • 16 oz chicken sausage
  • 2 c carrots, sliced
  • 2 red potatoes, quartered
  • 1 zucchini, quartered
  • 1 1/2 c broccoli, florets
  • 1/2 tbsp basil
  • 1/2 tbsp oregano
  • 1/2 tbsp garlic powder
  • 4 tbsp olive oil

Instructions

Preheat the oven to 400°.
