This chicken quesadilla recipe is super quick, simple and uses ingredients that you may already have on hand. Filled with chicken, onions and melty cheese!
These chicken quesadillas are so good! They are packed full of flavor with very few ingredients and uses my leftover Braised Chicken Thigh recipe to make these quesadillas even easier!

You can use whatever ingredients you have on hand and your families favorite toppings!

- cojita or Mexican blend cheese
What goes with chicken quesadillas?
Typically, to keep things easy I serve with tortilla chips and salsa. However you can also serve up rice, refried beans and even set out a big thing of nachos for your family to share!
How to Make an Easy Chicken Quesadilla
Shred the leftover braised chicken thighs with two forks or your hands.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and cook until softened, about 3 minutes.
Stir in the shredded chicken and taco sauce, heat through.
Remove the quesadilla filling from the skillet. Rinse the skillet and dry.
Lay the tortilla in the cast iron skillet, topping with cheese and the shredded chicken mixture with the final layer being cheese so the tortilla shell sticks. Cook for 2-3 minutes and flip cooking the other side for another 2-3 minutes until golden brown.
Repeat with the remaining filling.
Serve with toppings of your choice.
