This Chicken Quesadilla recipe is super simple to make and includes diced chicken, spinach, mozzarella cheese melted in between tortillas.

Quesadillas are a staple in our home. I love the fact that you can switch out for ingredients that are already on hand and what each family member enjoys.

If you have an electric griddle or even a Blackstone, the cooking process goes a lot faster as you have more room to cook even more chicken quesadillas at once!

Kick Your Chicken Quesadilla Up a Notch

If your family loves flavor and enjoys cajun seasoning, try this tip next time you make quesadillas.

Spread butter or olive oil over one side of each tortilla. Then, sprinkle cajun seasoning over the entire quesadilla. This is a little secret that makes restaurant quesadillas over the top!

  • Tortillas
  • Chicken
  • Spinach
  • Mozzarella
  • Cajun Seasoning – you can omit this and season with garlic salt and pepper

How to Make Easy Chicken Quesadillas

In a skillet, add olive oil.

Place chicken in the skillet and cook through. While the chicken is cooking, add in your seasoning.

Remove the chicken and set aside.

Next, place a tortilla into the skillet. Add a layer of cheese, then spinach, chicken and more cheese. Top with another tortilla.

Allow to cook until just toasted and flip, cooking the other side of the tortilla until the spinach has wilted and the cheese has melted.

Remove from the skillet and slice. Enjoy with sour cream, salsa, cilantro or any of your other favorite quesadilla toppings.

Ingredients

  • 8 Burrito Tortillas
  • 2 C Chicken, diced
  • 2 C Spinach
  • 2 C Mozzarella, shredded
  • Cajun Seasoning (optional)

Instructions

    In a skillet, add olive oil.

    Place chicken in the skillet and cook through. While the chicken is cooking, add in your seasoning.

    Remove the chicken and set aside.

    Next, place a tortilla into the skillet. Add a layer of cheese, then spinach, chicken and more cheese. Top with another tortilla.

    Allow to cook until just toasted and flip, cooking the other side of the tortilla until the spinach has wilted and the cheese has melted.
