Stuffed sweet potatoes are a comfort food that are perfect on chilly nights. They’re filling and easy to make especially when you have any leftover pulled pork. Not to mention, your family can top their potato with their favorite toppings!

Topping Ideas for Stuffed Sweet Potatoes:

While I are sharing my Stuffed Sweet Potato recipe using pulled pork from my Frugal Meal Plan (one years worth all planned out for you!) there’s a variety of ways to serve them up:

  • southwest style – black beans, cilantro, corn, queso fresco cheese
  • buffalo chicken – shredded chicken, buffalo sauce mixed with melted butter, ranch or blue cheese, diced tomatoes
  • breakfast – scrambled eggs, tomatoes, avocado, bacon
  • chili stuffed – chili, cheese and sour cream or greek yogurt

  • sweet potatoes
  • leftover pulled pork
  • shredded cheese
  • parsley
  • scallions

How to Make Stuffed Sweet Potatoes

Preheat the oven to 400Β°.

Line a baking sheet with parchment paper. Prick the sweet potatoes all over with a fork.

Place the sweet potatoes on the prepared baking sheet and bake until fork tender. This usually takes about 45-60 minutes depending on the size of your potatoes.

Remove from the oven and allow to cool slightly.

While the potatoes are baking, re-heat the pulled pork in a saucepan over medium heat, stirring often. You can also reheat the meat in the microwave if you choose.

Slice the sweet potatoes open and fill with the pulled pork, cheese, parsley and any other toppings your family enjoys.

  • leftover pulled pork
  • 2 c shredded cheddar cheese
  • 2 tbsp parsley
  • 2 tbsp scallions

Instructions
