This potato soup recipe is a easy and delicious recipe made in the slow cooker. It’s creamy, delicious and loaded with bacon, cheese and potatoes.

What is the thickener in potato soup?

The potatoes are going to thicken the soup naturally with the amount of starch that is in them. However, if you want a even thicker soup here’s a few options:

  • make a roux by combining equal parts of all purpose flour and butter in a small skillet. You’ll want to cook the flour taste off for a few minutes before adding into the potato soup.
  • adding cheese – add freshly grated before serving allows the soup to thicken.
  • make a slurry – combine 1 tablespoon or cornstarch with 2 tablespoons of the chicken stock or water. Whisk until smooth and pour into the slow cooker. Be sure to give the potato soup a really good stir to blend the slurry throughout the soup. Allow to thicken.
  • Heavy cream – we use heavy cream in this potato soup recipe to create a thicker consistency. Using whole milk will result in a thinner soup.
  • Immersion blender – using an immersion blender to puree the potato soup in the slow cooker will also help to thicken the soup. You can blend all of the potato soup or a portion of it until you get the consistency your family likes.

What is potato soup made of?

  • potatoes – we recommend yukon gold potatoes. You can also use russet or red potatoes.
  • chicken or vegetable stock
  • onion
  • butter
  • all purpose flour
  • evaporated milk – you can substitute for milk or even heavy whipping cream.
  • sour cream – you can also use greek yogurt in place of the sour cream.
  • cheddar cheese
  • salt and pepper

Should I leave the potato skin on for loaded baked potato soup?

It’s up to your discretion. When potatoes begin to soften during the cooking process the skin tends to peel from the potato. If you don’t care for the skin pieces, simply peel the potatoes before adding into the slow cooker. If you are short on time, simply dice the potatoes and place into the crockpot.

How to Make Loaded Potato Soup Recipe

To the slow cooker add the cooked bacon, diced potatoes, onion, salt and pepper.

Next, pour in the vegetable or chicken stock. You will want to ensure that the potatoes are just covered.

Slow cook on low for 6-8 hours or high for 3-4 hours. You simply want the potatoes to be tender.

Once the potato soup has cooked, place the butter in a saucepan and allow to melt.

Whisk in the flour to create the roux. Allow to cook the flour off for about a minute.

While using the whisk slowly pour in the milk until so that you have a smooth consistency. Allow to simmer as the roux will thicken quite a bit.

Pour the roux into the slow cooker and stir until fully combined.

Next, add in the grated cheese and sour cream.

Ingredients

  • 5 pieces bacon, sliced and cooked
  • 5-6 potatoes, russet, golden yukon or red potatoes
  • 3 1/2 c chicken or vegetable stock
  • 1 onion, diced
  • 4 tbsp butter
  • 1/3 c all purpose flour
  • 12 oz. evaporated milk
  • 1/2 c sour cream
  • 1/2 c cheddar cheese
  • salt and pepper, to taste
