This easy chocolate chip waffle recipe is perfect for back to school, or any time that you need to get the kids out the door quick!

Our kids love Eggo Chocolate Chip Waffles, but we started to realize they were a little expensive, and we were going through them fast.

We tried the Kroger brand, but this is one generic item that just couldn’t keep up with it’s delicious Eggo counterpart.

Since I’m always on a mission to find a tasty and frugal option, I thought I could easily make my own chocolate chip waffles for the kids.

The beauty of this easy chocolate chip waffle recipe, is that you can take about 20 minutes to whip up a whole bunch of waffles for the week.

You can pop a huge batch in to the freezer, and simply take out what you need and cook in the toaster, just like you would those yummy Eggo waffles.

Each batch makes about 12 thick and hearty triangle waffles!

Ingredients:

2 Cups Bisquick Waffle Mix

1 1/3 Cups Milk

2 tbsp. vegetable oil (we use canola)

1 egg

1/2 cup chocolate chips

Step 1:  Combine waffle mix, milk, vegetable oil, and egg together until smooth.  I love using my Kitchen Aid mixer for this!  We got it as a wedding gift almost 8 years ago and I still use it all the time to prep meals.

Step 2:  Add 1/2 cup of semi-sweet chocolate baking chips.  We use the generic Kroger brand to stay frugal.  Chocolate chips can definitely get expensive!

Step 3:  Pour the batter into your pre-heated waffle maker.  Our Belgian waffle maker is another wedding gift that we use all the time!  We always bust it out for quick “fancy” breakfasts when guests stay over.  I highly recommend one as part of your go to kitchen items.

TipThe chocolate chips will sink to the bottom of the mixer.  You can either mix the chocolate chips in, or pour the mix into the waffle maker and sprinkle the chocolate chips on top.  This gives you a little more control over where the chocolate chips go.  I tried it both ways, and found that I prefer to mix them in and just make sure I’m scraping all the chocolate chips off of the bottom.

Step 4:  Serve immediately, or freeze for later!  The beauty of these waffles is that you can put them in a ziploc bag or wrap in foil and pop in to the freezer.  You can put them in the toaster, just like an Eggo waffle, on those busy back to school mornings.
