This past weekend we had waffles for dinner, and we made it a super special occasion! The kids were so excited to eat breakfast for dinner, and therefore I was excited to go the extra mile to make it memorable.

We are Catholic, and I recently picked up a book called The Catholic All Year Compendium by Kendra Tierney. It’s a book for bringing more Catholic traditions into your home, and I love all of her ideas so far!

Since we are in Lent, I dove right in to see what fun traditions we could start right away, and this past Friday (March 25th) was the Solemnity of the Annunciation of the Lord or “Lady Day”. This is the day that the angel Gabriel visited Mary and to bring the news that she would give birth to a son (hence our $3 Dollar Tree blue decorations).

In Sweden, they eat waffles on this day, and so we did too! I used this as a fun way to get the kids excited to learn more about our faith, and of course it created a very memorable start to a family tradition…along with a very memorable mess! 🙂

Ingredients for Easy Waffles for Dinner (or Breakfast)

  • 3 eggs
  • 2 1/4 cups milk
  • 3/4 cup oil (canola, vegetable)
  • 3 tbsp syrup
  • 3 cups flour
  • 6 tsp baking powder
  • 1 1/2 tsp salt
  • Non stick cooking spray

Easy Waffle Recipe to Serve a Large Family or Crowd

This large batch of waffle mix makes about 24 regular size waffles or 6 Belgian waffles, which will serve a large crowd or family for breakfast, lunch, or dinner!

There are different ways to make waffles, but we love to make them in our Belgian waffle maker that we got as a wedding gift. It’s fun and easy for the kids to make on their own as well.

Step 1: Whisk together egg, milk, oil, and syrup in one bowl.

Step 2: In a separate bowl, mix together dry ingredients: flour, baking powder, and salt.

Step 3: Add dry mixture to wet ingredients, and stir just until mixed. For fluffy waffles , make sure that you don’t over mix! It’s okay if the batter is slightly lumpy.

Step 4: If you want to add in chocolate chips, blueberries, or other mix ins do that now and fold in gently.

Step 5: Use non stick cooking spray on a waffle iron or Belgian waffle maker. Heat per appliance instructions and add 1/4 cup waffle batter per waffle (or per Belgian waffle triangle…one cup total).

Step 6: Cook waffles until golden, crispy perfection. Usually about 5-6 minutes, however we just use the timer on our waffle maker.

Step 7: Add your favorite toppings and serve!

Storage

You can refrigerate extra waffles in an airtight container or bag for 3-4 days. Freeze in an airtight freezer bag for up to 3 months.

How to Reheat Waffles

You can reheat frozen waffles in the microwave on high for 1 to 1 1/2 minutes, or place in toaster just like a store bought toaster waffle.
