If you are looking for a quick and easy weeknight dinner recipe, this bean and beef skillet recipe is for you! This dish is made in the skillet for easy clean up and served in under 30 minutes.

You are going to love how versatile this bean and beef skillet meal is. You can omit or substitute ingredients in this dish with flavors that your family enjoys.

Ingredients

  • ground beef – you can use lean ground beef, ground turkey or whatever is on sale. Be sure to drain the fat once the meat has browned.
  • onion, bell pepper and minced garlic – for added flavor.
  • spices: chili powder, cumin, dried oregano
  • diced tomatoes – use whatever you have on hand. You can also use Rotel if you prefer.
  • black beans – these can be substituted for red beans or pinto if you prefer.
  • corn – frozen or can can be used, again whatever you have on hand.
  • brown rice, cheese and scallions or cilantro – for serving.
  • optional ingredients: while browning the meat you can add in a diced onion. You can also throw in a can of sliced black olives that have been drained, salsa and even a diced jalapeno or two for added heat!

How to Make Ground Beef and Beans Recipe

Heat a large skillet over medium-high heat with olive oil.

Next, add the bell pepper, onion (if using), bell pepper, salt and pepper. Cook for 2-3 minutes until softened.

Add the ground beef and break the ground beef up. Cook until browned and no longer pink. Drain off any excess fat.

Add chili powder, cumin and oregano for 1-2 minutes, until fragrant.

Next, add in the tomatoes, beans and corn. Heat until sauce is reduced and bubbling.

Add in the rice and stir to combine. Sprinkle with cheese and cilantro to serve.

Ingredients

  • 1 tbsp olive oil
  • 1 red bell pepper, diced
  • 2 garlic cloves, minced
  • Salt and Pepper to taste
  • 1 lb lean ground beef
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1 tsp dried oregano
  • 1 15 oz. can diced tomatoes, drained
  • 1 15 oz. can black beans, drained and rinsed
  • 1 c sweet corn
  • 1 c cooked brown or white rice
  • 1/2 c Mexican blend or cheddar cheese, shredded
  • 2 scallions, minced

Instructions
