It can be difficult to come up with packed lunch ideas for back to school, especially ones that are healthy! This spinach pizza quesadilla, marries healthy greens and pizza into one delicious portable lunch time treat.
This lunch idea is also simple enough that your kids could help with the making and packing process. Letting your kids help make their own food gets them invested in the meal prep process and makes them more likely to try new things. Your little helpers will also get increased feelings of confidence and independence.

Ingredients for Spinach Pizzadillas
- 1 medium soft tortilla
- 1/3 cup mozzarella cheese, shredded
- 1/8 tsp Italian seasoning
- Handful of spinach leaves
- Oil for frying or cooking spray
- Pizza sauce for dipping
Recipe for Spinach Pizzadillas
This spinach pizzadilla recipe is easy, and customizable for picky eaters! Simply leave the spinach out and have “regular” cheese quesadillas if you’re little ones can’t vibe. Just don’t give up too early, many kids will eventually warm up to the idea of new foods (even veggies).

First, make sure to add a bit of oil or cooking spray to a non-stick skillet over medium low heat.
Next, place 1 medium soft tortilla in skillet and spread shredded cheese over one half of the tortilla.
Then, sprinkle about 1/8 tsp Italian seasoning over the cheese and cook until cheese begins to melt.
Next, add the spinach on top of the cheese and fold in half. Cook for another minute until tortilla is golden brown on both sides.
Serve your yummy spinach pizzadillas with a side of pizza dipping sauce.

Serve your spinach pizzadillas with some cold crispy grapes, and a side of mozzarella and tomato salad. If your kids are particularly picky, mix this new lunch time entree with some easy favorites like Goldfish crackers, chips, or their favorite fruit cups.
