These lunch box waffle tacos would also make a fun family dinner idea! It’s easy to make, and you can even set up a topping bar so your kids can assemble their own taco creations.

Use frozen waffles to have lunch packed in minutes, or make homemade waffles if you prefer to cook from scratch.

Ingredients

– Eggo Buttermilk Waffles (or your favorite) – Peanut butter – Strawberries, sliced – Blueberries – Yogurt (for dipping)

HOW TO MAKE THIS EASY WAFFLE TACO LUNCH BOX INSTRUCTIONS Step 1: Preheat oven to 350 degrees.

Step 2: Using a muffin tin upside down, place a waffle between muffin bowls to create a waffle taco shape.

Bake waffle tacos for 4 – 5 minutes or until slightly crisped. Note: The waffle tacos should be firm enough to stand up on their own.

Step 3: Allow waffle tacos to cool. Step 4: Spread peanut butter inside each waffle taco.

Step 5: Gently stuff waffle taco with strawberries and blueberries. Step 6: Serve with syrup or yogurt for dipping.

If you’re using frozen waffles, you’ll want them to thawed enough to where you can mold them into a taco shape, when placing the waffles on the muffin tin.
