These Taco Stuffed Tomatoes are a great alternative to taco night! Simply stuff all your favorite taco ingredients into the tomato and enjoy!

Taco Stuffed Tomatoes make the perfect summertime meal! Whether you grab tomatoes from your garden, the farmers market or your local grocery store it’s a wonderful low carb recipe that comes together in just a few minutes.

This stuffed tomato recipe is a spin on stuffed peppers. Except, you don’t bake the tomatoes like you do peppers! Each tomato can be filled with your families favorite taco toppings!

Ingredients for Taco Stuffed Tomato Recipe

  • Ground Beef – you can switch this out for ground chicken or turkey.
  • Tomatoes – you want to ensure that you have a ripe beefsteak or similar variety of tomato.
  • Taco seasoning – either store bought or homemade Taco Seasoning will work!
  • Toppings: onion, cheese, cilantro, rice, avocado, guacamole, sour cream, tortilla chips or scallions work well.

How to Make Stuffed Tomatoes Recipe

Begin by browning your ground meet over medium high heat.

If cooking an onion with your taco meat, add it to the meat shortly before the meat has cooked through. Should you have any grease, be sure to drain off.

Return the meat back into the skillet, adding 2/3 c of water and taco seasoning. Allow to simmer until the sauce has thickened.

Turn over the tomatoes so that they are stem side down. Slice into 6-8 wedges depending on the size of your tomato, ensuring that you don’t slice all the way through the tomato. Carefully spread the wedges open so it’s like a cup for you to fill.

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 onion, diced (optional)
  • 2/3 c water
  • 1 taco seasoning packet
  • 4 large ripe beefsteak tomatoes
  • Toppings: onion, cheese, cilantro, rice, avocado, guacamole, sour cream, tortilla chips or scallions

Instructions

Begin by browning your ground meet over medium high heat.
