Make hot cocoa into something you can snack on with this delicious Hot Chocolate muffins recipe! These are great all year round too!

Hot cocoa is one of our favorite things during the cold weather! Kids love it, and we adults do too! We try to make Hot Cocoa Bombs each year and it’s a great way to warm up!

This year we made hot chocolate muffins, and WOW are they good! They’re super easy to make, and everyone in the family absolutely loved them. I even included instructions on how to make them dairy-free if you need that option!

Hot Chocolate Muffin Recipe

This is a very simple recipe to follow! It’s not picky, and they’re cheap to make! We love having these on hand. The kids love them for breakfast on mornings we’re in a hurry, and they make great desserts too!

These are great during winter and the holidays, and we love to eat these while having a holiday movie night! They’re be great to eat while watching Polar Express!

How to make Hot Chocolate Muffins

Step 1. Gather your ingredients!

You will need:

  • Hot Cocoa Mix (we used Starbucks)
  • Eggs
  • Baking Powder
  • Flour
  • Sugar
  • Vanilla
  • Milk
  • Butter (softened)
  • Chocolate Chips
  • Mini Marshmallows
  • Salt
  • Muffin Tin Liners or Non-Stick Spray

Step 2. In a medium sized bowl mix together the eggs, butter, sugar, and vanilla, and milk until well mixed. Then in a larger mixing bowl add in the flour, hot cocoa mix, baking powder, and salt and mix to combine.

Step 3. Slowly add in the dry mixture to the wet mixture and mix to combine. A whisk or a fork is fine, but you can use an electric mixer too.

Step 4. Fold in the chocolate chips until they’re fully incorporated into the batter!

Fill your muffin tins 3/4 way full, and bake at 375 for 17-20 minutes, or until a toothpick comes out clean.

Step 5. While they’re baking, use a pair of kitchen shears to cut your mini marshmallows in half.

Step 6. Pull your hot chocolate muffins out of the oven and place 4-6 marshmallow pieces on the top of each muffin, sticky side down. This will help them stick and stay put while getting hot and melty in the oven.

After the marshmallows are applied, put them back in the oven for 1-2 more minutes to make them soft and melty.

Let your hot chocolate muffins cool for 10 minutes before eating (the chocolate chips inside can be hot!) and then consume!

Hot Chocolate Muffins Tips:

  • Dairy Free. Make these hot chocolate muffins dairy free easily by getting dairy free chocolate chips, using almond milk instead of cow’s milk, and using margarine instead of butter! Works great!
  • Hot Cocoa. When you’re choosing a hot chocolate to make these with, choose a good quality hot cocoa to keep the flavor rich and delicious!
  • Marshmallows. Don’t overcook the marshmallows! They will get crunchy if left on any longer than a minute or two!
  • Storage. Store in a cool, dry place, covered, for up to a week.

Hot Chocolate Muffins

Ingredients

  • 1 1/2 Cups All Purpose Flour
  • 3/4 Cup Hot Cocoa Mix
  • 2 teaspoons Baking Powder
  • 1/2 Cup Sugar
  • 1/2 teaspoon Salt
  • 2 Large Eggs
  • 3/4 Cup Milk
  • 1/2 Cup Butter or Margarine (softened)
  • 1 1/2 teaspoons Vanilla
  • 3/4 Cup Chocolate Chips
  • 1/2 Cup Mini Marshmallows (halved)

Instructions

  1. Preheat oven to 375 degrees F.
  2. In a medium sized mixing bowl, mix together the eggs, butter and vanilla until well combined.
  3. In a larger mixing bowl, combine the flour, hot cocoa mix, baking powder, and salt until mixed thoroughly.
  4. Slowly pour the wet ingredients into the dry, and whisk until combined.
  5. Fold in the chocolate chips.
  6. Fill each greased or lined muffin tin 3/4 full with batter.
  7. Bake at 375 for 17-20 minutes, or until a toothpick comes out clean.
  8. Use kitchen shears to cut the 1/2 cup of mini marshmallows in half.
  9. When the muffins are done baking, place 4-6 mini marshmallow halves, sticky side down, to the muffins and place them back in the oven for 1-2 more minutes.
  10. Allow the muffins to cool for 10 minutes before eating.
