Pumpkin Feta Salad is a light, refreshing side dish for Fall. Change things up a bit with this light and delicious salad recipe.
How to Make Pumpkin Feta Salad
1lb pumpkin, chopped
1 tablespoon extra virgin olive oil, for drizzling
2 oz feta cheese
2 cups spinach leaves
2 tablespoons extra virgin olive oil, for dressing
2 tablespoon balsamic vinegar
1 teaspoon honey
pinch of salt, pepper, to taste
Preheat oven to 400 degrees F
Line a baking pan with parchment paper and spread chopped pumpkin evenly throughout.
Drizzle with olive oil.
Place in oven and bake for 18-20 minutes, flipping halfway. Bake until pieces are tender.
Combine extra virgin olive oil, vinegar, and honey and mix well.
In a large bowl, add pumpkin, and spinach.
Coat with dressing, and top with feta cheese.
