Are you wondering if it’s possible to make your own pop tart? We have wondered this ourselves, as store-bought pop tarts seem like a great idea, but they don’t really taste the best in my opinion.

I definitely think a homemade pop tart has all the potential to taste much better than the ones from the store, and these rainbow pop tarts do not disappoint!

You’ll be surprised at how easy it is to make the ball of dough. A few simple ingredients and that’s it! You have a homemade version of your kids’ favorite pop tarts from the store. And this might even beat them.

You can fill them with any kind of jam that you like. Doesn’t this make you so hungry? Because I am! Let’s get to cooking!

What ingredients do you need to make Homemade Rainbow Pop-Tarts?

Poptart Recipe

  • 1 1/2 C. All-Purpose Flour
  • 1 C. White Wheat Flour / Cornstarch
  • 1 Tsp. Sea Salt
  • 1 Tsp Sugar
  • 1 C. (2 Sticks) Cold Light Butter
  • 1/4-1/2 C. Ice Cold Water
  • Food Coloring
  • 4 Tsp. Jam of Choice

Icing Recipe

  • 1/4 C. Confectioners’ Sugar Substitute
  • 1 1/2 Tbsp. Whipping Cream
  • 1/4 Tsp. Vanilla Extract
  • Rainbow Sprinkles

What supplies are helpful to have on hand to make Homemade Rainbow Pop-Tarts?

  • Baking Pan
  • Baking Sheet
  • Food Processor
  • Pastry Cutter
  • Food Coloring
  • Bowls to mix your ingredients

How to Make Homemade Pop-Tarts

Place the 1 1/2 C. flour, 1 C. white wheat flour, 1 Tsp. salt, and 1 Tsp. sugar into a food processor or blender and blend together.

Add in the 1 C. COLD light butter and pulse again until a ‘grain-like density forms.

Lightly sprinkle in the ICE COLD water a little bit at a time and pulse just until the dough sticks together when formed.

Divide the dough evenly among the number of bowls you decide to make. Add the food coloring and mix with the dough to combine.

Roll the colored dough into balls and flatten them out into disks. Layer them in rainbow order and cut them in half.

Twist and roll the dough together a bit to create some marbleizing among the colors.

Wrap each half of the dough in plastic and place it in the fridge for at least one hour to chill.

Once the dough has chilled, preheat the oven to 400 degrees F. and line a baking sheet with a silicone baking mat; set aside.

Remove the dough from the fridge and roll one ball of dough out into an 8 1/2×11” rectangle.

Cut into 4 squares, reserving the leftover dough, and place 1 Tsp. of the jam into the center of half of the squares.

Fold the remaining squares over the ones with the jam and use a fork to pinch closed the edges to create your ‘pop tart’.

Transfer to the prepared baking sheet and repeat this process with the remaining half of the dough.

Use any leftover dough to create another pop tart.

Place the baking sheet in the oven and bake for about 15-20 minutes or until the pop tarts are in a golden brown color.

Once done, remove from the oven and transfer to a wire rack to cool completely.

While the pop tarts are cooling, mix together the 1/4 C. confectioners sugar substitute, 1 1/2 Tsp. whipping cream, and 1/4 Tsp. vanilla to create your frosting.

When the pop tarts are cooled, drizzle the icing over the top and add any sprinkles desired.

Enjoy right away or store in the fridge for 3-5 days.

This homemade pop tarts recipe is so easy to make! Obviously not as easy as just pulling them out of the box, but this is totally worth the effort. The pie crust is flakier which I love. The fruity and colorful center and topping are more vibrant and the icing is freshly made. This is the best pop tart in my opinion!

Make them with kids for a weekend breakfast, or around the holidays as a special sweet treat for the guests. You and your family will never look at boxed pastries the same ever again!
