Fill a medium bowl with water and as you slice the potatoes into long strips (do not slice too thin, but also not too thick – also, leave the skin on), place the strips into the bowl (this helps absorb the starch)
Pat the potato slices dry and set aside until you’ve patted all of the strips dry
Add fries to your fryer and fry for 5 minutes; remove and place on a plate with paper towels to drain
Raise the deep fryer temperature to 350 degrees F and then fry the fries again until they are crispy and light golden brown (careful not to make them too crispy)
Remove from fryer and let drain again, and sprinkle with sea salt. Serve hot.
