You can’t go wrong if you have an abundance of fresh zucchini from the garden when you make this delicious and mouthwatering Cheesy Keto Zucchini Hot Dish Casserole! 

If you’re following a low carb diet, this casserole will fill you up (and you won’t even miss the carbs)!

How To Make This Cheesy Keto Zucchini Hot Dish Casserole


2 medium zucchini, quartered and chopped (about 4 cups)

4 tbsp butter, sliced into small pieces

3 large eggs

1/4 cup heavy cream

1/4 cup chopped onion

1/2 tsp salt

1/2 tsp pepper

2 cups shredded cheddar

1/4 cup grated Parmesan cheese


Preheat oven to 350 degrees F

Add zucchini to a large pot of boiling water; boil for about 5 minutes and drain

Lightly spray baking dish with nonstick cooking spray and dump the zucchini in and spread evenly; top with butter and set aside

In a large bowl, stir together the eggs and cream. Add in onions, salt, pepper and 1 cup of cheese; pour over the zucchini in the dish

Top with remaining cheese and Parmesan; bake for 30-35 minutes until the cheese is bubbly and top is browned
