Broccoli Cheese Soup is a dump and go style recipe. Simply place broccoli, carrots, onions, garlic, cream cheese, spices and chicken broth into the slow cooker. Once softened add in cream and cheese for the perfect soup on a cold night.

What is the best cheese to melt in soup?

We prefer to shred our own cheese. We find that the store bought shredded cheese is a lot drier and doesn’t melt easily or blend very well. We recommend a mild or sharp cheddar cheese for this broccoli and cheese soup recipe.

How do you thicken broccoli and cheese soup?

If you’d like a thicker soup, we recommend:

  • mixing equal parts of melted butter and flour to form a paste before adding into the slow cooker.
  • you can mix a equal parts of cornstarch with flour or chicken broth in a bowl, then pour into the cheese and broccoli soup mixture.
  • adding more cheese will also help to thicken the soup.

What is broccoli and cheese soup made of?

The ingredients are pretty simple:

  • broccoli florets
  • onion
  • shredded carrot
  • garlic
  • cream cheese
  • chicken broth
  • heavy cream
  • shredded cheddar cheese (mild or sharp will work)
  • spices: nutmeg, salt and pepper

How to Make Cheese and Broccoli Soup

In the slow cooker add in the broccoli, onion, shredded carrots, garlic, cream cheese, chicken broth and spices.

Slow cook on low for 2-3 hours until the broccoli is tender.

Add in the heavy cream and using an immersion blender, blend until your desired consistency.

Mix in the shredded cheese and cover. Allow the cheese to melt.

Slow Cooker Broccoli and Cheese Soup

Ingredients

  • 16 oz. broccoli florets
  • 1 c carrots, shredded
  • 1 yellow onion, diced
  • 3 tsp garlic, minced
  • 2 oz. cream cheese
  • 1 tsp dried oregano
  • 1/8 tsp nutmeg
  • 2 c chicken broth
  • 1 c heavy cream
  • salt and pepper to taste
  • 8 oz. cheddar cheese, shredded

Instructions

    In the slow cooker add in the broccoli, onion, shredded carrots, garlic, cream cheese, chicken broth and spices.

    Slow cook on low for 2-3 hours until the broccoli is tender.

    Add in the heavy cream and using an immersion blender, blend until your desired consistency.

    Mix in the shredded cheese and cover. Allow the cheese to melt.

    Serve with your favorite bread.
