Slow Cooker Lemon Chick Recipe…also in the blog!Slow Cooker Lemon Chicken - One Pot, Two Meals Each meal = 4 hearty servings Total cost both meals = $8.00Total per serving = $1.00Ingredients:2 large chicken breasts, sliced into 6-8 pieces each $2.501 can of cream of chicken soup $1.004 cups chicken broth $1.252 tablespoons dry minced onion $.25Salt & pepper to taste $.25 2 lemons, zested & juiced $.501 package instant mashed potatoes $1.001 bag frozen mixed vegetables $1.00¼ cup instant rice $.25 Parsley for garnish, optional Preparation Instructions:Slice the chicken breasts into 6-8 slices each In a large bowl whisk together the cream of chicken soup, 1 cup of chicken broth, minced onion, salt & pepper, lemon zest and juice until well combined Stir in the sliced chicken breast Pour into slow cooker and cook on low for 5 hours Use a fork the shred the chicken To serve over mashed potatoes:Prepare the instant mashed potatoes per package directions and plate 4 equal size servings Use half of the cooked, shredded chicken to top the mashed potatoes Garnish with parsley,  if desired, serve & enjoy!To make the creamy soup:To the second half of the cooked shredded chicken, stir in remaining 3 cups of chicken broth, frozen mixed vegetables, and ¼ cup of instant rice Cook for an additional hour Ladle 4 equal portions of soup into bowls, serve, and enjoy!

Sheet Pan Chicken Nachos 6 servings Total Cost = Sheet Pan Chicken Nachos 6 servings Total Cost = $3.75Cost per Serving = $.62Ingredients:1 bag tortilla chips $1.002 cups rotisserie chicken, shredded $1.001 ½ cups salsa $.501 cup pepper jack cheese shreds $.50 ¼ cup sour cream $.50 ¼ cup cilantro, chopped $.25 Preparation Instructions:Preheat oven to 400 degrees and line a baking sheet with parchment paper Place on single layer of tortilla chips on the baking sheet In a bowl mix the shredded chicken and salsa together until well combined Place the chicken mixture evenly over the chips Bake for 20 minutes then remove from oven Sprinkle on shredded cheese and bake for an additional 10 minutes Drizzle on the sour cream then top with chopped cilantro Serve and enjoy!
